"Food and service in the restaurant was amazing"

We had an vening meal with mains and desserts, and a bottle of wine to share. Food was so nice, well presented and delicious, and the waitress Zena was lovely, very helpful and efficient. The manager/gentleman from the hotel reception was also really friendly and helpful.
The whole building is a beautiful place, a very old inn, but so well maintained.
After our meal, we decided to move into the bar/lounge area - unfortunately, we were (for the second day running) served by an obviously new member of staff in the bar. Everyone has to learn in a new job, but he didn’t listen to our orders and made a mistake with one of the drinks, but instead of changing it completely as asked, he just took out the citrus fruit that my wife is allergic to - and brought it straight back - we could still smell it in the drink and bits of it were left in it. There was no acknowledgment of his own mistake. By this time, my wife didn’t want to make any fuss so didn’t bother asking him about changing it again. We just left soon afterwards (my wife obviously couldn’t drink it).
It was just really disappointing after a lovely evening in the restaurant. In hindsight, we should have stayed and ordered more drinks there instead and hopefully the lovely waitress serving us would have done them then.
The new staff member obviously needs more supervision or to pay more attention to what people ask for. It wasn’t busy, so he wasn’t under pressure with lots of orders.
